These foods are meant to welcome us into a new year with blessings. And, truthfully, is there any greater blessing than the smell of a holiday meal cooking?   1. Sandra’s Potato- Apple Kugel
    (Adapted from Stella’s potato pudding (my step-grandma))

    You need:
    1 – 8” baking dish (glass or corning ware works best)
    4-6 Yukon Gold potatoes (depending on the size)
    1 cup of shredded Fontina, and Asiago cheese and enough grated Parmesan cheese to cover the surface of the kugel
    1 medium red onion, finely chopped
    A pinch of fresh thyme, kosher salt and fresh ground pepper, and paprika
    1 big pinch of brown sugar
    3 jumbo eggs
    2 Granny Smith apples

    Directions
    Peel the potatoes, cut into quarters and cover in cold water. Cook chopped onion in a little olive oil about seven minutes. Add a big pinch of brown sugar and cook two more minutes – add a little pinch of fresh thyme and stir in pan for about another minute. Set aside in a small bowl to cool.
    Butter the baking dish and set the oven at 350 degrees.
    Break three eggs into a large bowl – drop in a pinch of kosher salt and grind in a pinch of pepper. Shake paprika over one egg till it covers the yolk. Add a heaping cup of the shredded (you can grate the cheese if you prefer) Fontina and Asiago cheese. Mix together well. Peel, core and chop the apples. Put in blender on “grate”, or grate by hand and add them to the egg/cheese mixture. Take potatoes out of the cold water and chop into little pieces, put in blender at “grate” or “shred” setting, or grate by hand. Press out moisture and add to the large bowl along with the cooled onion/brown sugar/ and thyme mixture. Mix well.
    Put buttered baking dish on a baking sheet and set in the oven for ten minutes.
    Pour potato/apple mixture into the hot baking dish and cover top with grated or shredded Parmesan cheese. Return dish to the oven and bake for 50 minutes.

    Remember that cooking is like singing – the notes as well as the recipe directions are guidelines – feel free to add your own harmonies as long as you stay within the chord.

  2. Great Grandma Ida’s Himmel und Erde
    (Heaven and Earth)

    Peeled, cored and sliced baking apples
    Peeled and roughly chopped sweet potatoes (not yams)
    Applesauce
    Cinnamon and nutmeg (when you feel your nose twitch as if to sneeze, that’s enough nutmeg)

    Combine all in a baking dish
    Bake at 350 degrees for 1 hour or till it looks done
